Story & Background
Siblings Pepe and Karina Arguello have spent their entire lives surrounded by coffee plantations. After graduating as an agronomy engineer, Pepe returned to Chiapas with a clear ambition: to produce exceptional coffee.
In 2018, the Arguellos acquired Finca Santa Cruz. Having extensively traveled across Latin America to learn from top coffee farms, Pepe embarked on transforming the plantations and creating new processing recipes.
The results were immediate, with Pepe winning the Cup Of Excellence on his debut in 2019 and repeating the success in the subsequent editions of 2021 and 2022. Today, Finca Santa Cruz is widely recognised as Mexico's most innovative coffee farm.
Process:
1. Ripe cherries are manually picked at Brix > 23°
2. Overnight oxidation stage of 12h at 20°C
3. Cherries are pulped.
4. Coffee is fermented in open air tanks for 24hrs
5. Coffee is fully washed and floated in water canals
6. Parchment is dried for 14 to 18 days on patios.
